Sweet Potato and Bell Pepper Frittata
3 peppers – red or green
1 medium sized sweet potato
1 tbsp water
Approx. 3 tbs of olive oil
Prepare the vegetables
Wash your peppers, remove the seeds, then cut in half and half (depending on size of pepper) again.
Put your peppers into plastic bag and drizzle olive oil all over about 1 to 1 and half tbs
Then sprinkle over some Mixed Herbs again about 1 tbs and shake bag.
Place peppers into casserole dish and put into a preheated oven GAS MARK 6/Electric 200C for about 1 hour (roasting slowly and turning occasionally
Prepare the Frittata
Slice your onions
Clean and thinly slice your sweet potato
Place about 2 tbs of olive oil into frying pan and warm add the onions
Crack 3 eggs into a bowl adding a maximum of 1 tbs of water and gently whisk.
When the onions look transparent remove from pan and drop into egg mixture
Repeat with your sweet potato
Repeat with peppers
Give a gentle but thorough mix
Now make sure your frying pan is reasonably hot and add some more olive oil
Add the mixture back into frying pan and cook until firm on the top
Serve with some mixed salad and enjoy!
- The more you shake the contents in the bag, the more flavour you savour in the food.
- How you like your Frittata is subject to taste so you might like to add more peppers or onions.
- If pan is too hot it will burn, if not hot enough it won’t not seal – you could cook half way through and then pop under the grill.
- Remember the slower you fry your onions the sweet they will be.
